The Cleaver
When I designed The Cleaver, I wanted to create a pleasantly usable tool. One that is comfortable in the hand and doesn’t wear you out with a couple chops, but also has enough substance to process most food products with ease. I believe I have accomplished that. I’ve chosen 80CRV2 high carbon steel for its toughness and the acid wash gives it classic character while also imparting some corrosion resistance. Paired with a variety of handle material options, this blade is sure to make itself right at home on your knife rack.
